[logging] avoid using the root logger

Issue: Log messages send by one device were replicated and look like they come from all devices of the server.

Reason: We were using the root logger with a handler for each device.

This MR:

• do not use the root logger but one logger for each device (each having one handler)
• make logging uniform for all classes
