Rethink use of chevrons in sample and action headers

Just a tiny UX win: when the chevrons are on the left-hand side in an accordion, it is more common for them to point right when collapsed and down when expanded (cf. MUI and Ant Design). The current behaviour (down when collapsed and up when expanded) is more typically seen when the chevrons are on the right-hand side (cf. Bootstrap, Headless UI).
