doc: Description of the scan life cycle

This MR:

  • Add some description of the scan life cycle
  • Update the image to match the life cycle

I also have 2 comments:

  • I don't know if an error in the scan fully abort it or if STOPPING is still called
    • same for USER_ABORT
  • STARTING sounds a bit weird because there is no PROCESSING state. I mean it would be good to be very clear of the meaning here. Is STARTING a state or a transition? I guess for now it means processing, but i can't tell.
